Pak choi,  is a type of Chinese cabbage. Chinensis varieties do not form heads and have green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard green. Chinensis varieties are popular in southern China, East Asia, and Southeast Asia.
